Daniel Nates is chef of Olivea Farm to Table (Valle de Guadalupe), awarded a Michelin Star and Michelin Green Star. He is co-founder of Fritanguita, a poblano fritanga stand in Roma Norte, Mexico City. Before that he led Maizal in Puebla for eight years. Latin America regional finalist of S.Pellegrino Young Chef 2016 with his dish Quiltamal — winner of the Most Inspiring Message award. Named by Food & Wine en Español as one of Mexico's 19 best new chefs.
